Keto-Friendly Guacamole Recipe

Avocado is the perfect keto food since 80% of its calories are from fat. Because of this, guacamole is a very popular food for people on the  ketogenic diet (also known as the keto diet). In truth, it is difficult to make a guacamole recipe that is not keto friendly, but this one IS ketogenic. Substitute fresh romaine leaves or almond crackers for the corn chips if you're keto.

 And whether you are keto or not, this recipe is extremely tasty! 

Ingredients:

3 large avocados

1 tsp Real Salt or sea salt

1 tbsp garlic powder

1 diced garlic clove

2 tbsp organic lemon juice (or lime)

½ cup chopped cilantro

1 tsp chili powder

8 sliced cherry tomatoes

2  diced shallots

¼ cup organic olive oil

Directions: 

Cut around each avocado lengthwise and twist them to separate the halves. Take a sharp knife and hack the knife onto the pit and twist.  This should separate the pit and avocado, leaving the pit on the knife.  Scoop the fruit of the avocado into a bowl and mash with a fork or potato masher.  Add the salt, garlic powder, diced garlic, and chili powder into the mashed avocado.

Combine the lemon juice and chopped cilantro together and add to the bowl.  Finally, add the sliced cherry tomatoes, the diced shallots and the olive oil.  Mix until everything is thoroughly combined.

If you are not serving the guacamole immediately, place one or two of the pits on top of the guacamole and cover the bowl with plastic wrap and refrigerate.  Adding the pits back to the guacamole minimizes the browning that can occur.
