Stuffed Dates in 5 Minutes: The Ulimate Power Snack

Have a sweet tooth? Need a pre-workout snack to boost your energy? Or simply want to up your charcuterie board game? Make these stuffed dates ahead of time, store them in the fridge and have them on hand for when the cravings hit. If you’re wanting to eat them right away let them first sit in the freezer for 10+ minutes to get a more satisfying, candy-like texture. Bon appétit!

Makes 8 dates

Ingredients:

3 Tbsp walnuts, raw or toasted
2-3 strokes of grated orange zest
1/8 tsp cinnamon
1/8 tsp allspice
8 medjool dates, pitted
Malden salt, to taste

Directions:

  1. Add all but the dates and salt in a food processor or bullet blender and pulse till the nuts have been finely chopped. The vanilla extract and orange zest will cause the chopped nuts to slightly adhere to one another.
  2. Using a pairing knife, slice each date lengthwise just enough so that you can remove pit. Using your hands slightly pull apart the date a bit more to increase the boat-like opening and fill with a generous portion of nut mixture. Squeeze shut and place into desired storage container. Sprinkle the tops of the dates with malden salt and let sit in fridge for at least 30 minutes before eating.
